When our parents or grandparents were younger, obese people were a rarity. Processed foods were very difficult to find and many were seen as delicacies. Bread was homemade from whole wheat while the white one was very difficult to find. People were thin because food was not so processed and so easy to find as it is now. Pastries, especially the ones from wheat, became the most consumed products by the poor people as they are cheaper and create the feeling of fullness, but they are also full of calories and simple carbohydrates that only lead to extra weight. Besides the fact that pastries are full of empty calories, they also bring gluten that influences a large proportion of the population without even knowing that they suffer from gluten intolerance.
What is “gluten”?
Gluten is found first of all in grains, especially in wheat, but also in barley, rye, oats and it refers to 2 protein families: gliadines and glutenines, the first ones being the most aggressive. This gluten triggers celiac disease (gluten sensitivity), and this disease leads to a reaction of the immune system that would bring an inflammatory bowel.
The body suffers from inflammations that are dangerous for our health and from allergic reactions because of the proteins found in cereals, but most of the time we don’t realize how serious they are and what exactly triggers them.
Addiction, withdrawal, hallucinations, are just a few of the effects given by the consumption of cereals after being ingested and processed by our organism. According to the research by Dr. Christine Zioudrou, after digestion, gluten is decomposed in polypeptides also called “exorphins” that act like a drug in the brain, because these exorphines manage to break the brain’s barrier inducing a feeling of euphoria. Once consumed the products with gluten, our brain becomes addicted, and a potential waiver from them would bring a state of withdrawal similar to drug addicts.
Gluten destroys the intestinal mucosa, and people suffering from celiac disease are either skinny or fat, even obese. Why skinny? Because their intestines cannot absorb vitamins and minerals corectly, the calories being only passing through the body and being blocked by gluten. The obese people reach that stage by eating a lot of calories and wheat blocks the correct functioning of the body but also of the brain. How does gluten destroy the intestinal mucosa? Gluten makes the leaky gut which allows the wheat components to enter the blood (where they don’t belong). The body generates antibodies including for its own components of the intestinal tissue that gets destroyed, this way leaving a door open to the bacteria from the intestines to get into the blood and create inflammation in the whole body, leading afterwards to autoimmune diseases.
Unfortunately the gluten’s effects are many, among which can be named migraines, dizziness, poor concentration, depression, anxiety, fatigue, diarrhea, constipation, bloating and gas, cravings for sweet foods, acid reflux, feeling sick or vomiting, anaemia, weight loss, fattening, muscle pain, bone pain, joint pain, endometriosis, hypoglycaemia, infertility, urinary infections, vaginal infections, oral infections, irritation or other skin problems, autoimmune hepatitis and other liver problems.
Joint pain is triggered especially by wheat consumption. Wheat increases blood sugar, a process that leads to changes of the proteins in the blood and in the tissues (Glycation), including the one in the joints (ex: knees, hip, hands). Joint cartilages will consume their cells and once destroyed, they cannot be recovered because they cannot rebuild themselves. As a conclusion to this, the more we consume products with high glycemic index, the faster our cell reserves from our joints get consumed, and our joints become more rigid and more painful at the hips, knees and hands level. Try to make an experiment and see if by giving up wheat products and high GI foods for a month will improve your health concerning your joint pain.
Late night snacks are also triggered by wheat products consumption, because the more you eat the more you will feel the need to eat and more often, like cookies, pretzels, pizza, pasta, sweets, etc. The ones who succeed in giving up on pastries from wheat will find a weight loss and a reduction in food cravings.
Every time we eat pastries, especially the ones from wheat, the blood sugar (the glucose percentage) increases, causing a rise in the blood insulin. The belly fat or that muffin top that you find around your waist is the result of a massive insulin production that is also unhealthy. The visceral fat (abdominal) creates inflammatory signals that inhibit the tissues (muscles and liver) from a correct reaction to insulin. This way, the pancreas receives the signals that it must produce more insulin, then we consume more products with high glycemic index and the pancreas must generate more insulin and so on, creating a vicious circle that leads to insulin resistance. Studies proved that wheat increases the blood sugar more than sugar itself. Even more than that, the bread from wholemeal has an glycemic index of 72 while sugar has only 59.
A long time ago I discovered a health problem that was related to candida albicans, a fungus that normally exists in our body but under certain circumstances they multiply more than normal, disturbing the healthy flora. After many drug treatments but also natural treatments, I realized that this fungus is not willing to reduce its size, therefore I decided recently to give up completely to the products that feed it and that surprisingly are also the ones that lead to leaky gut (related to celiac disease). I gave up pastries and all the products containing wheat and other cereals containing gluten, I also gave up high glycemic carbohydrates (simple carbs) and especially sugar and any other sweetener be it natural or artificial. Because of the fact that I am still in the withdrawal period, when my body is craving for sweets and pastries, I am trying to keep myself on the healthy road without giving in to temptations around me and to eat only healthy foods. I will still eat forbidden foods like sweets and pastries in the future, but I hope this future will be as rarely as possible after a long time when I hope that my old health problem will be completely gone. For the moment I already noticed changes on my face, my acne is almost gone and my skin starts to look more and more smooth, clean and healthy.
